If you still haven't heard of acai bowls, then thankfully you have stumbled upon this post! Acai is considered to be a superfood berry, similar to blueberries, and very high in antioxidants. So high in antioxidants, in fact, that they give blueberries a run for their money.
Who wouldn't want to eat something this beautiful for breakfast?? What a positive way to start the day!
The best part about acai bowls is that they're so versatile and there is essentially no wrong way to make one. You can mix anything into the smoothie-like base, and you can add any toppings you like.
These bowls are not only quick and easy to make, but also delicious!! But wait, that's not all.....they are healthy, and stick with you long into your day at the office, yoga class or hours of shoveling snow! What more could you ask for? If you haven't tried one of these scrumptious little bowls yourself, I highly recommend you stop by your local health food store and buy the ingredients (Trader Joes just started selling the acai packets) and make one at home using this recipe.
Below, I have listed the way I prefer to make my acai bowls.
Serves 1.
Ingredients:
Acai Bowl "Base":
1 avocado
1 heaping spoonful of high quality peanut butter (I use this brand)
1 tbsp honey
1 (3.5 oz) packet of frozen acai puree
splash of coconut water or apple juice
Note: I always try to blend the ingredients without the coconut water/apple juice, but sometimes the blender needs a little liquid just to get it moving.
Optional Toppings: fresh sliced strawberries, fresh raspberries, blueberries, cocoa nibs, unsweetened shredded coconut, raw pumpkin seeds, chia seeds, flax seeds, honey drizzle
1. Place all ingredients for base into high-powered blender. Blend until creamy, scraping sides once during blending.
2. Pour smoothie base into a bowl and top with toppings of choice, don't forget to be creative!
3. Enjoy this bowl, knowing that you're starting your day off with a healthy treat!
