Recipe: Buckwheat Power Bowls

Who doesn't need a powerful start to their day? These breakfast (or anytime) bowls are super filling and just as easy as overnight oats to make!

Start with raw buckwheat groats. You may have heard of buckwheat flour, sometimes it is used in pancakes or crepes, or some gluten free flour mixes. I buy mine in the bulk bins at my local health food store. For all my gluten-free friends, buckwheat may have the word "wheat" in it but I assure you: it is gluten-free. However, beware of mixes that use buckwheat as some baking mixes use buckwheat flour along with all-purpose flour. Buckwheat is kind of an earthy grain, but makes a great, cold porridge-like smoothie bowl that will stick with you until well past lunchtime.

The night before you want to have a buckwheat bowl (I know, this requires some pre-planning) put 3/4 raw buckwheat groats, or 1 cup for a large serving, into a bowl or jar and cover with a large amount of water. Soak in the fridge overnight. If you're pressed for time, I've made these bowls after soaking the buckwheat for an hour.

Ingredients:

Base layer:

3/4 cup raw buckwheat groats (soaked overnight)

1/3 cup coconut milk

1 spoonful peanut butter

1 spoonful raw honey

Top layer (added to half of base layer): frozen fruit of choice, or:

4-5 frozen strawberries

1/4 cup frozen raspberries

Toppings (optional): raw pumpkin seeds, unsweetened shredded coconut, maca powder, cocoa nibs, fresh berries, chia seeds, flax seeds, hemp hearts, honey drizzle

1. Drain the excess liquid out of the buckwheat. For some reason, soaking the buckwheat creates a gelatinous liquid that may be tough to strain out. But, if you're like me, you know the role that gelatin and collagen have in promoting good gut health so I leave a tiny bit in and never rinse it to remove it.

2. Add soaked, raw buckwheat groats to blender along with coconut milk, raw honey, and creamy peanut butter. Blend thoroughly.

3. Pour HALF of the mixture into a bowl. To make the top layer, in remaining half in blender add frozen fruit of choice (I use raspberries and strawberries). Blend well.

4. Pour top layer on top of base layer. Add toppings of choice.
